Vegetable biryani is a vegetarian version of Mughal cuisine that consists of rice, spices and vegetables. The main ingredients of biryani consist of rice (ideally basmati rice), spices, meat, eggs, vegetables, dried fruits, nuts, and numerous optional ingredients such as yogurt. It is believed that Mumtaz Mahal, the queen of Emperor Shah Jahan, created the dish in the 16th century. Over time, the popularity of biryani spread throughout India and other countries, making it very popular today, such as Sindhi Biryani (yogurt), Bombay Biryani (hot and spicy), or Lucknowi Biryani (meat and rice are separated and then cooked together). There are a variety of biryanis.
