3 cups basmati rice

- FOR THE VEGETABLES
1/2 teaspoon of olive oil
1 onion
1 teaspoon raw hazelnut
3 medium carrots
1/2 medium cauliflower
2 capia pepper
1 cup pea
2-3 garlic cloves
1 teaspoon salt
1 teaspoon ground pepper
1 teaspoon ground coriander
1 teaspoon allspice
1 teaspoon cinnamon
1 teaspoon ginger
Directions
- Add olive oil to the wok and sauté the onions
- Then add the cashew nuts and continue to fry for 1-2 minutes
- Then add carrots, peas and mushroom one by one to the pan and fry for 2-3 minutes.
- Add the Kapia peppers and continue to sauté.
- Add the garlic and continue to fry.
- After the vegetables have been fried for 15-20 minutes, add the spices (salt, chili pepper, coriander, allspice, cinnamon and ginger) and fry for 5 minutes, then turn off the heat.
- FOR RICE
- Add the rice to the pot with olive oil and fry for 5 to 10 minutes.
- After roasting the rice, add water, then add chickpeas, raisins, 1-2 bay leaves and salt and cover so that the water boils.
- We add the spices (coriander, cardamom, freshly harvested ginger) to a meringue to give it flavor and make a bundle (put the spices in a cloth and tie it) and add it to the rice and let it cook on low heat for 15 minutes.
- Let the rice rest for 10-15 minutes after cooking.
- After the rice is rest, mix the prepared vegetables with the rice and mix well.
